12 oz. of center cut swordfish
2 Cloves of garlic, thinly sliced
3 Tablespoons of olive oil
1/2 cup of chopped tomato
4 Leaves of fresh basil, chopped
Salt and pepper to taste
Grilled Swordfish
First grill swordfish for one minute on each side then finish cooking in oven for another
twelve minutes.
Tomato Rouille
In a heated pan, place 3 tablespoons of olive oil and slightly brown the garlic. Then in a
large bowl add the garlic, tomatoes, basil, salt and pepper and toss.
Place tomato rouille on top of grilled swordfish. |
